Ingredients
- 1 cup diced onion
- 2 Tbsp butter
- 1 Tbsp minced garlic
- 1 lb spicy Italian sausage
- 6 cups chicken broth
- 2 cups water
- 4 — 5 yellow potatoes (halved, sliced, or cubed in 1 inch pieces)
- Salt & pepper (to taste)
- 2 cups heavy cream
- 4 cups chopped kale
- Parmesan cheese
Directions
Brown onion in butter until soft. Stir in minced garlic and cook another minute.
Add in sausage and cook until browned.
Pour in chicken broth and water.
Add in potatoes and salt & pepper to taste.
Bring to a boil, then lower temp to simmer until potatoes are tender.
Reduce heat to low and stir in heavy cream and chopped kale. Simmer until kale softens, about 5 mins.
Serve topped with parmesan cheese.
