White Chili

Ingredients
- 4 lb. can white beans
- 4 cups chicken, cooked and diced
- 1 tbsp olive oil
- 1 or 2 medium onions, chopped
- 4 garlic cloves, minced
- 2 (4 oz) cans chopped green chilies
- 2 tsp. ground cumin
- 1½ tsp dried oregano
- ¼ tsp cayenne pepper
- 6 cups chicken broth
- 12 oz grated Monterrey Jack cheese
Directions
Heat oil in frying pan. Sauté onions, and stir in garlic, chilies, and spices. Cook 2 minutes. Add beans and broth and bring to a boil. Reduce heat and simmer uncovered until tender, about 1½ — 2 hours.
Add chicken until warmed through. Serve with cheese to sprinkle on top.
OR
Add beans, chicken, broth & sautéed veggies to crock pot.
Cook on low 6–8 hours. – serve w/ cheese
