Twice Baked Acorn Squash
Prick the skin of 2 medium acorn squash (1½ lbs each) and microwave on high for 5 minutes. When soft enough to cut, slice each in half and scoop out seeds; discard. Put meat in microwave, open-faced, and cook for an additional 3 minutes to soften squash meat.
Scoop meat into bowl and mash together with:
be sure to leave about ¼” of meat in shell to keep its shape
⅓ package of frozen spinach (thawed and squeezed dry)
3 bacon strips, cooked and crumbled
2 heaping Tbsp Parmesan cheese
2 Tbsp thinly sliced green onion
1 Tbsp margarine, softened
salt and pepper to taste
Mix well and spoon back into 2 of the 4 acorn shells (discard the other 2 shells).
Sprinkle with Parmesan cheese if desired.
Bake in the oven at 350°F for 25 to 30 minutes until golden brown.
To initially prepare the squash in the oven, cut in halves and place upside down on a greased baking sheet and cook at 350°F for 40–45 minutes until tender.
