Boil in a large pot of water:
entire turkey carcass
legs and wings
thick bones
*leave some meat on the bones
Boil about 1½ hours until meat falls off of the bones. Strain broth in colander saving broth. Pick meat off bones and add to broth.
Put back on stove and simmer with:
chopped celery
chopped onion
chopped carrots
1 cup frozen corn
1½ to 2 cups white rice,
2 or 3 chicken bouillon cubes
1 tbsp hot sauce, optional
Simmer until vegetables are tender, rice is cooked, and broth is a little thick. Add salt and pepper to taste.
