Tortellini Soup

Ingredients
- 1 diced onion
- 2 carrots, sliced in rounds
- 2 stalks diced celery
- 1 lb Italian sausage
- 1 (8 oz) can tomato sauce
- 6 cups beef broth
- 1 pkg cheese tortellini
- 2 cups spinach leaves, roughly chopped
- Minced garlic
- 1 tsp Italian seasoning
- Salt & pepper
- Parmesan cheese
Directions
Saute onion, carrots, and celery in olive oil until they soften, 5 — 7 minutes.
Add garlic, Italian seasoning, salt and pepper. Stirring another minute until fragrant.
Add Italian sausage and cook until browned.
Pour in tomato sauce and beef broth. Simmer 10 — 15 mins.
Add cheese tortellini and spinach leaves. Stir and cook 10 mins.
Serve topped with parmesan cheese.
