Ingredients
- 3 lbs rump or sirloin tip roast, sliced thinly (meat slices better when slightly frozen)
- 5 large ripe tomatoes
- 2 envelopes Goya seasoning (Sazon)
- Salt and pepper to taste
- 1 Tbs minced garlic
- Oil for browning the meat
Directions
After slicing the meat, marinate it in the Goya seasoning, salt, pepper and garlic.
In a large frying pan - prefer a cast iron one - place some oil and brown the meat pieces on both sides. Brown only a few pieces at a time. Place them in a separate dish until all pieces are browned. Save any juice that is in the frying pan. Place a layer of meat and cover with a layer of sliced tomatoes, repeating until the last layer of tomatoes is on top. Pour the juice over, cover and simmer until the meat is tender.
