Season chicken and pork with salt, pepper, garlic and brown in a little olive oil. Add all the ingredients and 4 cups of water. When the chicken is tender and the sauce has thickened a little, strain the juice and set it aside. Remove the bay leaves.

In a food processor, place all the chicken and pork mixture and mix until it is ground for stuffing. Add the spinach (cooked and well drained) and the parmesan cheese. Set aside after tasting for salt and pepper.

Boil water in a large pan. add salt and 1 Tbs. of olive oil. Add the manicotti and carefully stir with a wooden spoon until tender. Drain and when they are cool enough to handle, stuff them with the mixture and place them in a pyrex pan and pour tomato sauce over them and sprinkle more parmesan cheese. These can be frozen and warmed when needed.
