Sancocho

Ingredients

• 1 roasting hen, cut up
• 1 sprig parsley
• 4 scallions
• ½ green pepper, cut up
• ½ onion, cut up
• Oregano, salt, and pepper to taste
• 1 pkg frozen yuca, cut up
• 1 pkg frozen ñame, cut up
• 3 bouillon cubes (Knorr preferred)

Directions

Boil chicken in a large pot with enough water (~3” above chicken).

Skim foam and lower heat.

Add all ingredients except vegetables and cook until chicken is tender.

Add vegetables and cook until tender.
