Rocky Road Fudge Bars
Ingredients
- 1 Cup Butter (divided)
- 2 Oz Unsweetened Chocolate Bars (divided)
- 2 ½ tsp Vanilla (divided) 1 ½ Cup Sugar (divided)
- 1 Cup + 2 Tbsp Flour (divided)
- 1 tsp Baking Powder
- 3 Large Eggs (room temperature)
- 8 Oz Cream Cheese (softened, divided)
- ¼ Cup Milk
- 1 Lb Powdered Sugar
- 2 Cups Miniature Marshmallows
Directions
Bar:
Melt ½ Cup Butter and 1 Oz Unsweetened Chocolate in sauce pan over low heat, being careful not to burn. Then add 1 tsp Vanilla.
In a mixing bowl, combine 1 Cup Sugar, 1 Cup Flour and 1 tsp Baking Powder.
In another small bowl beat 2 eggs well.
Mix the chocolate sauce, eggs and dry mixture together with mixer. Cool the chocolate mixture and add a little at a time avoid shocking the eggs. Spread bar layer in the bottom of a greased and floured, 11x9 METAL baking pan (glass will burn the bar layer). Set aside to prepare the filling.
Filling:
In a medium size bowl mix the following ingredients with a mixer until creamy texture: 6 oz Cream Cheese (reserve 2 Oz), ½ Cup Sugar, 2 Tbsp Flour, ¼ Cup Butter, 1 egg and ½ tsp Vanilla.
Carefully spread the filling batter on top of the bar batter by putting dollops all around and smoothing out with the back of a large metal spoon or silicone spatula. DO NOT mix the layers together!
Bake @ 350°F for 35 minutes or until a toothpick inserted in the dessert, comes out clean. The top layer will look slightly golden, not white.
Topping:
Prepare about 10 minutes before bar is ready to take out of the oven. In a large saucepan, melt the following ingredients together over low heat: ¼ Cup Butter, 1 Oz Unsweetened Chocolate, 2 Oz Cream Cheese, ¼ Cup Milk, and 1 tsp Vanilla.
Remove from heat and add 1 Lb Powdered Sugar, mixing by hand until all powdered sugar is dissolved and the mixture is a light brown chocolate color. Keep the topping warm and fluid by add a little more milk as needed.
When the bar and filling are baked, take out of oven and immediately add 2 Cups Miniature Marshmallows or enough to cover the entire surface evenly. Put back in the oven for about 2 minutes until the marshmallows begin to melt. Then, take out of the oven and immediately pour the chocolate topping over the melting marshmallows. Use the back of a metal spoon or silicone spatula to swirl the topping together with the marshmallows being careful not to cut into the bar and filling layers.
Refrigerate or freeze to cool completely before cutting into squares! Keep refrigerated.
