(Green Plantain Chips)

Directions

Peel off skin and slice plantains into rounds about ¾” thick.

In a heavy skillet heat about 1” of oil, fry the plantain rounds until lightly golden on both sides. Place onto absorbent paper.

With the bottom of a flat glass gently flatten each round.

Slip back into the hot oil for few seconds until crisp and golden.

Place on absorbent paper and sprinkle with salt.

Serve immediately.

Notes

These chips can be frozen after the first frying and flattening and, after thawing them out, can be fried again before serving.
