Orange Roughy Italiano

Ingredients

3 tbsp. olive oil
½ cup sliced onion
2 cups thinly sliced zucchini
1 tsp. dried oregano
1 tomato, chopped
salt and pepper to taste
1 lb. orange roughy, cut into serving-size pieces
½ cup Monterey Jack cheese, grated

Directions

Sauté in oil onion, zucchini, and oregano, stirring often for about 4 minutes.

Put tomato and fish over sautéed vegetables; sprinkle with salt and pepper.

Cover skillet and simmer fish over medium heat until fish is flaky (about 9 minutes).

Uncover and sprinkle cheese over fish.

Cover until cheese melts (about 1 ½ minutes).

Serve immediately.
