Ingredients
- 2 Tbsp butter
- 1 cup rice
- 1 small onion, chopped
- ½ red pepper, chopped
- 1 jalapeno, seeded and chopped
- 2 cloves garlic, chopped
- 2 cups chicken broth
- 2 Tbsp tomato paste
- Salt & pepper (to taste)
- Cilantro (to taste)
Directions
Melt butter in a pot over med heat. Add rice and stir, toasting for 1 — 2 mins.
Add onion, red pepper, jalapeno, and garlic. Stir and cook for a few minutes.
Add chicken broth and bring to a boil. Stir in tomato paste, cover and simmer 18 — 25 mins or until rice is tender.
Salt and pepper to taste and can add cilantro leaves to taste.
