Louisiana Seafood Gumbo

Roux:
1 cup oil
1 cup flour
Cook in an iron pot, stirring until golden brown.
Add:
2 bottles clam juice
3 cups shrimp boiling water
1 can crushed tomatoes
Salt, red pepper, black pepper to taste
Simmer over medium heat for 1 hour.
Seafood:
1 lb medium shrimp, boiled/cleaned
1 lb scallops, halved
½ lb firm white fish
1 container fresh oysters
1 Tbsp File Gumbo Powder
Add seafood and File Gumbo Powder. Continue cooking and serve with rice.
