Directions

In a pot, saute bacon, cut in 1 inch pieces. When starting to brown, stir in rinsed brown lentils. Add salt and pepper to taste.

Pour in about 4 cups water, bring to a boil, then turn down heat and simmer until lentils are soft, about 1 hour.

Add a little more water while cooking if dry.

Notes

Can add onion and garlic while sauteing. Serve over rice.
