Kielbasa Cassoulet

1 package navy pea beans
5–6 cups water

Add a sprinkle of the following: parsley, garlic powder, thyme, pepper
2 bay leaves
1 tsp celery seeds

Bring to a rolling boil for about 10 minutes. Remove from heat, cover, and let stand 1 to 2 hours.

In a large frying pan, cook 4 to 5 slices chopped bacon (do not let them get crispy, just until cooked). Add 1 medium chopped onion and cook until just browned.

Add:
3 tsp minced garlic
2 tomatoes peeled and chopped
2 cups beef broth
Salt and pepper to taste

Simmer for 10 minutes.

Drain beans. Add broth mixture and 2 cups water. Just bring to a boil. Pour into a large casserole dish. Bake uncovered at 350°F for 1½ to 2 hours or until beans become tender.

Cut up kielbasa sausage or any smoked sausage you prefer. Stir sausage into beans and cook uncovered for an additional 20 to 30 minutes.

Add more broth/water if desired to keep beans moist.
