Great Northern Bean Soup

Soak over night 1 lb. bag of great northern beans.

In a large kettle, add enough water to cover beans (about 2” over beans). Cook slowly with ham bone and some ham on the bone (or you can use ham hocks), 1 chopped onion, and 2 bay leaves. Skim off foam.

After an hour or so of cooking, cut up and add to soup 2 or 3 carrots, 1 stalk of celery, and a sprinkle of pepper. Simmer a couple more hours until it thickens. Remove bone and bay leaves.

*Good to cook in the morning. Let sit all day and cook a little more before serving.
