Creamy Tortellini Soup

Ingredients
- 1 lb Italian sausage
- 3 Tbsp butter
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 tsp basil
- ½ tsp red pepper flakes
- 3 Tbsp flour
- 6 cups chicken broth
- 1 can diced tomatoes
- 1 lb cheese tortellini
- 3 cups fresh spinach
- 1½ cups heavy cream
- 1 cup grated parmesan
- Salt & pepper (to taste)
Directions
In a large pot, brown Italian sausage, cooking until browned and crumbled. Remove sausage from pot.
Add butter to pot. When melted, saute onion about 5 mins. Add garlic, Italian seasoning, basil, and red pepper flakes. Cook 1 min until fragrant. Sprinkle flour over veggies and cook stirring constantly about 2 mins.
Gradually pour in chicken broth, whisking constantly. Add diced tomatoes. Bring to a boil, then reduce heat and simmer 10 mins. Return sausage to soup.
Add tortellini, cook 5 mins.
Add spinach, cook 2 mins.
Turn burner to low and add heavy cream, grated parmesan, salt & pepper to taste.
Stir until heated through (do not boil).
Serve topped with fresh parmesan.
