Chinese Fried Rice

Make 3 to 4 cups white rice and set aside.

You can use any meat or any combination of meat, like chicken (1 or 2 breasts), pork (2 to 3 pork steaks) cut up raw.

On high heat, fry meat in a large frying pan in a small amount of oil/margarine until fully cooked.
Remove from pan. Still on high heat, add a little more oil/margarine and sauté 1 medium chopped onion and 1 medium chopped green pepper.

Put meat back into pan with vegetables. Lower heat and add 2 peeled and shredded carrots.
Sprinkle soy sauce over vegetables and mix well.

Add rice in 3 or 4 increments, mixing well and sprinkling with soy sauce until all is mixed together and uniform in color.
Don’t saturate in soy sauce.
Remove from heat.

Beat 2 or 3 eggs with salt and pepper and 1 tbsp water.
Heat margarine in small frying pan. Pour eggs in pan and cook like a crepe.
Cut up egg into rice.
