Carrot Casserole

Ingredients
- 1½ lbs sliced carrots
- 1 — 2 Tbsp butter
- 1 cup mayonnaise
- 1 Tbsp grated onion
- 1 Tbsp minced garlic
- ½ cup shredded cheese
- 2 Tbsp crushed Ritz crackers
- Salt & pepper (to taste)
Directions
In a large saucepan, place 1 inch of water and add carrots. Bring to a boil. Reduce heat, cover, and simmer until crisp/tender, 7 — 9 min. Drain, reserving ¼ cup liquid.
Transfer to a 1½ qt baking dish. Add 1 — 2 Tbsp butter and salt & pepper to taste.
In a bowl, combine mayonnaise, grated onion, minced garlic, and reserved cooking liquid. Spread evenly over carrots.
Sprinkle with shredded cheese, then top with crushed Ritz crackers.
Bake at 350°F for 30 min (uncovered).
