Beef Stew

CategoriesBeef, Main Dish
SourceHumbracht 2nd Edition

Cut up a nice pot roast into pieces. Brown in a large pot with a little oil.

Add:
1 large onion, chopped
salt and pepper to taste
garlic powder to taste
1 envelope au juice

Add 5 to 6 cups water and bring to a boil. Turn down heat a little so water is still bubbling. Cook until meat is tender about ¾ hour.

Add:
3 or 4 potatoes, peeled and cut up in large chunks
2 or 3 carrots, peeled and cut up

Turn up heat and add water to cover potatoes and carrots. Cook for ½ hour. When they
are tender, add 1 can drained green beans and cook about 15 more minutes. Turn off heat
and let stew thicken (can mix water and flour to make a paste to thicken stew).
*Watch for sticking on the bottom of the pot. You may have to season a little more if
you had to add a lot more water (do after you thicken it).
