Baked Beans

Ingredients
- 1 package great northern beans
- 1 lb salt pork, cut in half
- 1 medium onion, chopped
- 1 tsp dry mustard
- 2 tsp brown sugar
- 2 large tsp molasses
- Dash of Pepper
Directions
Prepare the night before: Cover beans with water and soak overnight.
Put in a large kettle and add more water (about 3 inches above beans)
Add salt pork and chopped onion. Cook over medium heat until beans are tender, about 1½ to 2 hours. Remove salt pork.
Stir in dry mustard, brown sugar, pepper, and molasses (no salt!).
Transfer beans to a baking dish. Slice salt pork and lay on top of beans.
Bake at 350°F for 1 hour, until nicely browned and bubbly. If beans are too dry, add a little water. If too watery, spoon some out.
