Baked Beans

*Prepare the night before:
Cover 1 package great northern beans with water and soak over night
Put into large kettle and add more water (about 3” above beans).
Add:
1 lb. salt pork cut in half
1 medium onion chopped
Cook over medium heat until beans are tender, about 1 ½ to 2 hours. Remove salt pork.
Add:
1 tsp. dry mustard
2 tsp. brown sugar
dash pepper (no salt!)
2 large tsp. molasses
Put into baking dish. Slice salt pork and lay on top of beans. Bake at 350°F for 1 hour until nice and brown and bubbly. *If too dry, add a little water. If too watery, spoon some out.
