Arroz Con Guandu

Ingredients
- 3 cups long-grain rice (prefer Mahatma brand)
- 1 can guandu beans
- 3 Tbsp oil
- Salt and pepper to taste
Directions
In a deep pot (cast iron recommended), heat oil.
Add half of the washed and drained rice and brown until golden.
Add guandu beans with liquid and enough water to cover rice by ~2 inches.
Bring to a boil, reduce heat, and simmer until rice is tender.
If rice is still hard, sprinkle water a little at a time and continue cooking.
Keep covered over low heat to brown the bottom of the rice (to make Concolon).
